What is the difference between Thief and Covet?

What are the significant differences between the moves Thief and Covet?

The only difference between Thief and Covet are that one's a Dark-type move and the other is a Normal-type move.

In terms of what they do, it's exactly the same.

Covet don't work on Ghost types though, will it? Whereas Thief will work on every type?

Yup, Covet also can't be learnt through TM, so it's often more efficient to use Thief than Covet
